If you’re like many of us, you did the New Year resolution thing (again) with the goal of eating healthier.
Hmm…why is it we so often start out fired up, then about a month into it, have settled back into our old habits? Maybe it’s because there aren’t enough treats to satisfy that raging sweet tooth – ones that you actually want to eat? Well, friends, I’m here to help you. Never mind I haven’t begun my own resolution just yet, gonna’ start any day now…do as I say, not as I do…
This 5 minute wonder (yep, it takes all of 5 minutes to throw it together) is like a luscious chocolate tapioca pudding. Those itty-bitty chia seeds swell up when they hang out in liquid, and become these marvelous creamy pearls – the secret to the amazing rich and silky texture of this pudding. And… you won’t be hungry an hour later ’cause this stuff is jam-packed with fiber, keeping you full and happy for hours.
Eat Little Eat Big is my assigned blog for January’s SRC (Secret Recipe Club). Susie’s blog is delightful – and she hails from Hawaii! As soon as I saw the photo of her vanilla chia pudding, it was love at first sight! Finally, healthy and delish all rolled into one!
My love of addiction to chocolate is no secret, so I added a bit of Dutch process cocoa to her recipe, and swapped 1% milk for the soy milk (you can use soy milk, almond milk, or any other type of milk you like).
